Definitely one of the better restaurants on Anguilla. The Mahi Mahi was amazing. Really cool atmosphere too. For sure going back

Mary Pat and her husband are gems. The food was magnificent. Hibernia was not only the home of incredible food but the atmosphere was Devine. Mary Pats love of art and creativity can be seen in her fabulous garden. My husband is still raving about the steamed garlic! Our food and presentation were stellar!
Love love love Hibernia. If you go to Anguilla you MUST go and have a wonderful experience!

The crayfish was delicious, the service excellent and the view and grounds are incredible. But a post-meal walk among their for-sale art pieces walked us past ivory sculptures that likely would be illegal anywhere else and art pieces from Myanmar that (I believe) is a conflict zone. Good food, very questionable ethics, lots of other restaurants and galleries on the island to try instead.

I don’t usually leave reviews, but after having lunch at Hibernia restaurant in Anguilla, I felt I had to.
Since the moment we walked in, we were captivated by the stunning views and setting. Peaceful, elegant and welcoming, every detail is carefully taken care of by owner and beautiful hostess Mary.
From the white tablecloths, to the christofle silverware and beautiful china, it was love at first sight.
And this is all before we even tried the food.

To start, we ordered the in house smoked fish, with brown toast, it was a delicate and delicious selection.
For main course, my husband had the Mahi, and I had the thai style spicy fish and vegetables soup, both selections were to die for.
We enjoyed this lunch so much, and we are looking forward to go back soon, we didn’t leave room for dessert this time so it is a great excuse to be back.
For me this is without doubt the best restaurant in Anguilla.

March 6th, 2019;

My wife and I have been to several of the restaurants on Anguilla and this is for the most part a standout from the others. Yes it may be a bit out of the way which was not a problem for us having a rental car and some familiarity with the island from previous trips. The restaurant does offer a transfer service for a nominal fee for those that may not have a rental vehicle.

We had an 8: 00 PM reservation and we were promptly seated by the Hostess/Owner Mary Pat. From then on the service provided by the Waitstaff was impeccable with Mary Pat stopping by occasionally to top off a wine or water glass or to make certain that everything was to our satisfaction (it was).

Chef Raoul Rodriguez was incredible this evening. For "Starters" we had;

TARTELETTE AU CRABE, LANGOUSTE ET CHATAIGNE D’EAU - Warm crab, lobster & water chestnut tartlet

TERRINE DE FOIE GRAS MAISON, CHUTNEY DE MANGUE AU VIEUX RHUM - Terrine of homemade Foie Gras; served with a fresh mango & old rum chutney; Home-made toasted walnut bread

Both were excellent and well presented.

For Main Courses we had;

CASSEROLE THAILANDAISE DE ‘CRAYFISH’ AU BASILIC ET AU LAIT DE COCO - Basil & coconut milk Thai casserole with Crayfish (out of the shell) ; served with Steamed rice noodles.

MAGRET DE CANARD POELE, SAUCE ACIDULEE AUX FRUITS ROUGES, LEGUMES ROTIS AU SESAME; RIZ ET QUINOA VAPEUR - Perigord duck breast pan grilled & finely sliced; red fruit sauce, Roasted vegetables coated with sesame; steamed rice & quinoa

Again, both were excellent and something each of us will hold as a memory of one of our best dinners if not THE BEST dinner on the island.

Deserts were;

Warm Chocolate Brownie with Mint Ice Cream

Three scoops of homemade ice cream (Vanilla + Chocolate + Coffee).

The Mint Ice Cream was extraordinary with the fresh mint that simply stands out from "store bought" ice cream that has that processed extract flavor.

I cannot say enough about the service, Mary Pat's staff are on the move constantly tending to tables or scanning the dining room in wait of taking care of a diner's needs. It is some of the best service I have ever had.

Beyond all this the atmosphere is so unique and relaxing it makes the dining experience just breeze on by.

Update February 2020;

Dined at Hibernia again, our 2nd experience was not nearly as memorable as was the 1st.

Had a great evening at Hibernia. The food was fantastic, so fresh. Great wine selection. Mary and her staff really looked after us. Can’t wait to get back. I would highly recommend.

Extra ordinary in every sense of the word. From design to food conception to meticulous execution, this restaurant leaves nothing to be wished for. One of the best dining experiences of the past ten years for us.
